Raw banana oven fry or Aartikaya oven fry



Ingredients:
Raw bananas or Artikaya 3 big sized
Turmeric powder 2 pinches
Oil 2 teaspoons
Red chili powder 1 teaspoon
(adjust accordingly)
Salt as needed

Preparation:
1. Wash and peel the raw banana. Cut them into small pieces. In a wide  tray mix  the raw banana pieces, oil and salt.
 2. Grease a oven tray and and spread the raw banana pieces on it. Pre heat the oven at 350 and keep the tray the oven.
3. Bake for 10 to 15 minutes and broil for 5 to 10 minutes.
4. Remove from oven and add very little salt if needed ,nd turmeric powder. Mix well.
 5. Add red chilli powder and mix well.

Potato Boondi curry or Aloo Boondi curry


Ingredients:
Potatoes 1 pound or ½ kg
Boondi 1 cup
Onion 1 (optional)
(chop into small pieces)
Turmeric powder 1 pinch
Red Chili powder 1 teaspoon
(adjust accordingly)
Oil 2 tablespoons
Salt as needed

Preparation:
1. Cut potatoes into even sized cube pieces.
2. Heat a pan and add oil after oil is heated turn into medium low flame, add the onion pieces to it, after the onions turn translucent and add the potato pieces.
3. After they turn into golden color add salt , turmeric powder and mix well.

4. When they are cooked and crispy add boondi and mix well, cook for 2 minutes.
5. Add red chili powder mix well and switch off the stove.

Dondakaya or Tindora or Kovakka or Tondekayi or Ivy gourd or Little gourd oven fry


Ingredients:
Dondakayalu / Tindora / Ivy Gourd/ Little Gourd 1 pound or ½ kg
Turmeric powder 2 pinches
Oil 1 teaspoon
Red chili powder 1 teaspoon
(adjust accordingly)
Salt as needed

Preparation:
1. Wash and clean the dondakayalu cut the ends. Cut them into rounds. In a wide mix the dondakaya, oil and salt ; mix well. Grese a oven tray and and spread the donadakaya pieces on it. Pre-heat the oven at 350 and keep the tray the oven.
2. Bake for 10 to 15 minutes and broil for 5 to 10 minutes. Remove from oven and add little salt, turmeric powder and red chili powder.

Cauliflower Fry


Ingredients:
Cauliflower 1 medium sized
Oil 1 tablespoon
Chat masala 1 teaspoon
Pepper powder ½ teaspoon
or Red chilli powder 1 teaspoon
(adjust accordingly)
Salt as needed

Preparation:
1. Cut the cauliflower into small florets. Heat a pan skillet or deep pan and oil to it. Add the cauliflower florets. Cover it with a lid When the cauliflower florets become slightly tender. Mix well.
2. Add chat masala and mix well and fry for 5 to 10 minutes. Add salt and mix well and switch off the stove.

Potato Ginger fry or Aloo Adrak fry

My son was having severe cold and cough. He did not want to drink ginger juice with honey. I tried all other ways .. Finally I made this curry and he loved it .. it is very tasty since then we started to prepare this at home..
Ingredients:
Potato ½ pound or 250 grams
Ginger 3 inch by 1 inch piece
Tumeric powder 2 pinches
Oil 2 tablespoons
Salt as needed

Preparation:
1. Peel the potatoes and cut them into small even sized cube pieces.
2. Heat a pan and add oil after oil is heated all the potato pieces.
3. When they are slighlty cooked add salt and tumeric powder and mix well.
4. Cut ginger into pieces and blend it in a mixie or blender. When they become tender add the ginger paste and mix well.
5. Fry until the potato pieces become crispy. This will take about 10 minutes in medium flame.

Raw banana oven chips


Ingredients:
Raw Bananas 4
Oil 1½ teaspoon
Red chilli powder 1 teaspoon
Chat masala ½ teaspoon (optional)
Tumeric powder 1 pinch
Salt as needed

Preparation:
1. Cut banana into thin slices and soak in salt water for 10 minutes.
 2. Dry them in a cloth or tissue paper. 
3. Grease a oven pan and spread the banana slices. Spray oil using pam or gently spread oil over the slices.
 4. Preheat the oven and bake in 350 F or 150 degrees for 10 to 15  minutes. Change from bake to broil mode and broil for 5 to 10 minutes, till the color  changes slightly.
5. Sprinkle salt.
 6. Add red chilli powder and chat masala powder, mix well.
7. Serve with rice or you can eat as a snack.

Aartikaya Fry or Raw banana fry variety -2

3. After they turn into golden color add salt , turmeric powder and mix well.
4. After they are cooked and crispy add red chilli powder mix well and switch off the stove.

Dondakaya Pakodi Curry


Ingredients:
Dondakya 1 pound
Peanuts 1 cup
Red chilli powder ½  teaspoon
Oil 6 teaspoons or 2 tablespoons
Salt as needed

For Pakodi or Pakoras:
Onions 2 big
Besan 2 cups
Green Chili 3
or
Red chilli powder 1 teaspoon
Oil for frying
Salt as needed


Preparation:
1. Cut onions into long pieces.  In a bowl add besan, onions water, salt, red chilli powder and coriander powder. The batter should not be thin.  If it is add besan to it.
2. Heat a pan after oil and after oil is heated add batter to the oil and fry them.

Preparation of curry:
1. Heat a pan and add 1 teaspoon of oil. Add the ground nuts and fry. Keep them aside.

2. Cut dondakaya or tindora into long pieces. Add the remaining oil to the pan after it is heated add the dondakya pieces  when they are half heated add the tumeric and redchili powder and mix well, fry till they change the color. Add peanuts and mix well.

3. Add the pakora or pakodi to the curry.
4. Add salt and mix well.
