Jalpaneo Avacado Salsa



Ingredients:
Jalpaneos 2
(De-seed it, if you don't like spicy)
Avacado 1
Tomato 2 (medium sized)
Onion 1
Lime juice 3 table spoons
Finely chopped cilantro or coriander leaves for garnishing
Salt as needed

Preparartion:
1. Cut avacado into 2 to 4 pieces and scoop out the skin and seed . Mash it.

2. Cut jalpenos into small pieces. Add lemon juice and salt. 
3. Chop onions and tomatoes. Add to the bowl.
4. In a processor or blend them for a little while in pulse mode. Blend them for a minute.
 5. Serve them with tortilla chips.

Cheese Quesdilla

Kids love cheese quesadilla….. They get calories and it is very fun for them if you make them into different shapes too …

Ingredients:
Tortillas 2
Shredded Cheese (Mozarella or Chedder Cheese) 1 cup
( or ) Cheese slices 4
Pepper or Red Chilli flakes ¼ to ½ teaspoon (optional)
(adjust accordingly)
Salt as needed (optional)

Preparation:
1. Heat a tawa or dosa pan after it is heated put a tortilla on it after the tortilla is slightly cooked spread cheese slices or spread shredded cheese over it.

2. When the cheese melts sprinkle salt and pepper. Hold the tortilla to half and press it with spatula.
3. Gently flip it over and cook on the other side. Cut it and serve with sour cream, guacamole or salsa.

Pico De Gallo or Fresh Salsa

Ingredients:
White onion 1 big sized
Tomatoes 3
Jalapeno peppers or Thick chillies 3
(Adjust accordingly)
Fresh cilantro leaves ½ cup chopped finely
Limejuice 2 table spoon
Salt as needed 

Preparation:
1. Cut onion, tomatoes and jalapeno into small pieces. Transfer them to a bowl.
2. Add cilantro, lemon juice and salt. Mix well.
3. Refrigerate for and an hour.

Vegetable Quesadilla or Veggie Quesadilla - Variety 1


Ingredients:
4 flour tortillas
Grated Cheese(Cheddar cheese) ¾ cup
Red bell peppers or Red capsicum ½ big sized
Cooked black beans ¼ cup (optional)
Mixed vegetables (Corn, carrot, beans) ½ cup
Oil 1 ½ teaspoon
Salt as needed
Preparation:
Soak black beans in water for 6 hours. Cook the black beans.
1. Cut capsicum or red bell peppers into small pieces. Heat oil in a deep pan or skillet, sauté the red bell peppers , mixed vegetables until they are tender.
2. Heat a flat pan and spread a cooked tortilla on oil on the tortilla add the cheese (I did not have grated cheese , I cut the cheese into small pieces)
3. When the cheese starts to melt add the vegetables ( red capsicum , mixed vegetables).
4. Spread the cooked black beans.
5. Place another tortilla over the vegatbles and press the tortilla with a spatula.
6. Gently flip the quesadilla over to the other side and press the tortilla with a spatula.
7. Cook for 30 sec on the other side.
8. Cut it four quarter circles.


9. Serve with the salsa, sour cream and guacamole.
