Walnut Almond Sesame Podi - 300th post

Good to use with rice, idlies and dosas. Healthy , good source of Omega 3 and iron. You can use this as a curry powder.
Ingredients:
Walnut ½ cup
Almond 1 cup
Til or Nuvvulu or sesame seeds 1 cup
Tamarind 2 inch piece
Turmeric powder ½ teaspoon
Red chili powder 2 teaspoons
(Adjust accordingly)
Salt as needed


Preparation:
1. Heat a pan and dry roast walnut, almond, til in medium low flame for 5 minutes. Add tamarind after switching off the stove. This will make the tamarind soft and easy for grinding.
2. In a mixie or blender grind all the above ingredients in soft powder.
3. Add turmeric powder, red chili powder and salt. Blend for 2 minutes.

Karapapodi



Ingredients:
Coriander seeds or Dhaiya or Dhaniyalu 1 cup
Chana dal or Bengal gram or Sengapapu ¾ cup
Urad dal or Menapapu ¾ cup
Cumin seeds or Jeera ¼ cup
Mustard seeds ¼ cup
Garlic pods 7 (optional)
Dried Curry leaves 1 cup
Red chillies 10 to 15
(Adjust accordingly)
Dry tamarind Lemon sized
Oil 2 teaspoons
Salt as needed

Preparation:
1. Heat a deep pan or skillet after it is heated turn to medium low flame and add coriander seed, chana dal, urad dal, mustard seeds and red chillies.
2. Dry roast them for 2 to 3 minutes and add jeera, curry leaves and dry roast until the dals slightly change their color. Switch off the stove and add salt. After they cool transfer them to dry mixie or dry blender bowl.
3. Blend them and add tamarind pieces and oil, grind again.
4. Add the peeled garlic pods and blend again make it into a coarse powder. 

Eat with hot rice or idly or dosa. Add oil or ghee for kids.

Idly podi or Pappula podi


Ingredients:
Roasted Chana Dal 1 Cup
Dry Coconut powder 1 Cup
Red Chillies 10
(Adjust accordingly)
Jeera 2 teaspoons
Oil 2 teaspoons
Tamarind 1 lemon sized
Salt as needed

Preparation:
1. Heat a pan add roasted chana dal, red chillies, jeera and dry coconut powder.
2. When the coconut powder turns light brown in color switch off and add the tamarind.
3. After it cools, in a blender blend them into a soft powder add little oil and blend again.

Peanut Podi / Groundnut podi or Palli Podi or Vesanga paapu podi - Variety 1

This can be used as curry powder and eaten along with rice.

Ingredients:
Peanuts or groundnuts or palli 1 cup
Red chillies 7
Tamarind 3 inch piece
Garlic (optional)
Jeera(optional)
Salt as needed

Preparation:
1. Dry roast peanuts / groundnuts and red chillies until the peanuts turn to light brown color.


2. Switch off stove and add tamarind pieces. The hot peanuts will make tamarind soft and it will be easy to grind. After the peanuts cool.In a mixie or food processor add peanuts, red chillies, tamarind and salt.


3. Make it into a soft podi. It can be used for 2 months.

Coconut podi

This is very popular podi in Tamilnadu. It can be taken with rice and dosas. It is also used as curry powder.

Ingredients:
Coconut 1
Urad dal or menapa pappu 3 tablespoons
Chana dal or senga pappu 3 tablespoons
Hing or Inguava 3 pinches
Red Chillies 6 (adjust accordingly)
Ghee 1/2 teaspoon
Salt as needed


Preaparation:
1. Scrape the coconut finely.
2. Heat a pan and add chana dal ,after 2 minutes add urad dal and add the red chillies. (No oil is required just dry roast) When the dals change color switch off the stove.
3. In the same pan add the ghee and fry the scraped coconut in medium low flame.
4. In a blender or mixie add all the ingredients and make it into a coasre powder.
Refrigirate and it can be stored for a week.

NOTE:  Dont add salt if you want to use as curry powder.

Nuvvulu podi (or) Sesame Powder

This can be used in curries or eaten along with rice. Good for breast feeding moms this increases milk production . This produces lot of heat in body so it should not be over eaten.

 


Ingredients:
White sesame seeds 2cups
Red chilli powder      2 teaspoons
(adjust accordingly)
Salt as needed
Preparation:
1. Heat a pan and dry roast the sesame seeds in low flame when they turn golden in color switch of the flame .




2. In a mixie or blender make a powder of sesame seeds add red chilli powder and salt  and mix well.

Populla podi or Idly podi

Ingredients:
Roasted Chana dal(Potanala pappu) 1 cup
Peanuts(Palli or Vesanaga pappu) 1/2 cup
Jeera 2 teaspoons
Red chilies 15
Salt as needed

Preparation:
1. Heat a pan. Now add the roasted chana dal in the pan for about 5 minutes on a low flame . No need to add any oil for this podi.
2. Remove the roasted chana dal and add peanuts to the pan and roast them on allow flame for 5 minutes .
3. Remove the peanuts and put in the roasted chana dal bowl.
4. Roast the jeera and red chillis in the pan and add to roasted chana dal and peanuts.
5. Grind all the items in a mixie and make them into a fine powder .Add salt.

Kandi Podi (Toor and spice powder)

Ingredients:
Toor dal (or) Kandi pappu 1 Cup
Chana dal (or) Senaga pappu 1/2 cup
Moong dal or Pesara pappu 1/4 cup
Urad dal or Menapa papu 1/8 cup
Red chillis 5-6
Salt

Preparation:
1. Heat a pan and roast the toor dal in a low flame for about 10 min.
2. Remove the toor dal and put in a bowl and now roast chana dal in low flame till the raw smell goes out.
3. Put the chana dal in the toor dal's bowl and roast moong dal in low flame for 3 minutes.
Put the moong dal in the chana and toor dals bowl and roast the udad dal till turns into golden color.Put this into the dals bowl.
4. Now roast red chillis and put them in the dals bowl.
5. Now make this dals and chillis mixture into a fine powder.
6. Add salt and store in air tight container. Very yummy when mixed with white rice and ghee.
Also served with dosas ,put oil in the powder and eat with dosas. This is Kandi Podi Andhra people fav. spice powder.
