Flax snack or Flax chips

Flax seeds have good source of omega- 3. I made chapathi flour with it, for my kids I made this snack.

Ingredients:
Wheat flour   2 cups  
(One cup Maida and 1 cup wheat flour can be used for more crispy chips)
Flax seeds 1 cup
Salt  1 teaspoon
Red chili powder 1 teaspoon(optional)
Oil  for deep frying


Preparation:
1. In a big bowl mix add wheat flour, flax seeds, water( about 1 cup) and salt. Make it like chapathi flour.
2. Flatten the flour using a chapathi roller. Cut them into rectangular shape by making them into lines with a knife.
3. Heat a deep pan or skillet and add oil after oil is heated. Turn it into low flame and gently add the pieces.
4. When they turn into golden brown color gently flip them over to the other side. Transfer them to a tissue paper.

Plantain or Raw banana browns

In IHOP we ate hash browns ... kids loved it ... I got an idea about the Raw banana browns. This can be used as curry if we add onions to it or it can be given as a healthy snack for kids..

Ingredients:
Raw bananas 2
Oil 2 tablespoons
Tumeric powder 2 pinches
Red chilli powder 1 teaspoon
(adjust accordingly)
Salt as needed

Preparation:
1.  Peel the raw banana and shred it.
2. Heat a pan and add oil to it. After the oil is heated add the shredded or julienned raw banana to it. Turn to  medium low flame.

3. When it is fully cooked and slightly changes color add salt, tumeric powder and red chilli powder. Mix well. Switch off the stove.

Ragi uttapam



Ingredients
Ragi Flour 1 cup
Urad dal 1 cup
Idli rice 2 cups
Menthi seeds ½ teaspoon
Onion 1
Green chillies 2
Ginger ½ inch
Oil for making the uttapam
Salt as needed

Preparation:
1. Soak urad dal, rice, menthi seeds and soak for 6 hours. Add water and grind it and add ragi flour and grind again. Add salt and mix well. The batter should be in medium consistency. Ferment for 8 hours.For instant ragi uttapam you can use fermented dosa batter and add ragi flour.
2. Cut onions, green chillies and ginger into small pieces.
3. Heat a dosa pan and spread the batter into round shape.
4. Spread onions, green chillies and ginger pieces. Spread 1 teaspoon of oil along the circumference of the dosa.
5. When it cooked on one side gently flip it over the other side. Turn to low flame and cook for 1 minute.
6. Serve hot with chutney.

Dosakaya Chintakaya Pachadi


Ingredients:
Dosakaya or Yellow cucumber 1 big sized
Chintakaya tokku or dry tamarind 3 tablespoons
Chana dal or Senaga papu 2 teaspoons
Urad dal or Menapa papu 2 teaspoons
Mustard seeds 2 teaspoon
Menthi seeds ½ teaspoon (optional)
Jeera or Cumin ½ teaspoon
Red chilies 8
(Adjust accordingly)
Ginger ½ inch piece
Green chili 2 (Adjust accordingly)
Hing 2 pinches
Oil 3 teaspoons or 1 tablespoon
Salt as needed

Preparation:
1. Chop dosakaya into pieces.
2. Heat a pan and add 3 teaspoons of oil, after is heated add chana dal, urad dal, jeera, mustard seeds, hing and red chillies. When the urad and chana dal turn their color and mustard seed splutter, switch off the stove.
3. In a mixie or grinder grind the above tadka. Add dry tamarind or chintakaya tokku, green chilies, ginger and salt.
4. Add the doskaya pieces and blend for 30 seconds.

Walnut Almond Sesame Podi - 300th post

Good to use with rice, idlies and dosas. Healthy , good source of Omega 3 and iron. You can use this as a curry powder.
Ingredients:
Walnut ½ cup
Almond 1 cup
Til or Nuvvulu or sesame seeds 1 cup
Tamarind 2 inch piece
Turmeric powder ½ teaspoon
Red chili powder 2 teaspoons
(Adjust accordingly)
Salt as needed


Preparation:
1. Heat a pan and dry roast walnut, almond, til in medium low flame for 5 minutes. Add tamarind after switching off the stove. This will make the tamarind soft and easy for grinding.
2. In a mixie or blender grind all the above ingredients in soft powder.
3. Add turmeric powder, red chili powder and salt. Blend for 2 minutes.

 


Moong dal or Pesara Murukulu



Ingredients :
Rice Flour 5 cups
Moong dal flour or pesara pindi 1 cup
Butter ¼ cup
Oil ¼ cup
Sesame seeds or Nuvvulu ½  cup
Red chilli powder ¼ cup (adjust acordingly)
Water for mixing the dough
Oil for deep frying
Salt as needed

Preparing the moong dal powder:
1. Heat a pan and dry roast moong dal in low flame. After it cools, grind it into a fine powder.

Preparation:
2. In a big bowl mix rice flour, moong dal flour, sesame seeds, salt and red chilli powder. Heat a pan and melt butter add oil and when it hot switch of the stove and add this to the big bowl. Now add water little by little and make it like chapathi dough. Not too soft nor too hard.


3. Add the dough making them into small balls. Using a press used to make murukulu or jentikalu. Use the star shaped round plate.
4. Press the mould it releases the dough in a straight line.
5. Gently turn the dough into circluar form.
6. Heat a skillet or deep pan and add oil for deep frying. Gently drop the murukulu and uniformly fry on both sides until they turn golden color.

Wheat Upma Vadas

I had some left over wheat upma  ...I made soft dalia for my kids ... after coming back from outside .... my husband wanted to eat some starter. So I got an idea ....


Ingredients:
Wheat rava upma or dalia or Goduma nuka upma 3 cups
Oil for deep frying

Preparation:
1. Make the wheat rava upma into small balls and flatten them.
2. Heat oil for deep frying in a deep pan or skillet after oil is heated add the flattened wheat balls.
3. Fry them uniformly on both sides till they change color to golden brown. Serve hot with chutney or ketchup.



Wheat rava upma preparation for kids:
I use curd or butter milk as it is good source of calcium and tasty for kids to eat.

Ingredients:
Daliya or wheat rava or goduma nooka 2 cups
Mustard seeds 1 teaspoon
Green chillies (finely chopped) 4 (I used 1 as I made for this for kids)
Ginger(finely chopped) 1 inch
Onion(finely chopped) 1 big sized
Butter milk 2 cups thick
Oil 2 teaspoon
Salt as needed

Preparation:
1. Heat a pan or skillet after it is heated add oil to it, add mustard seeds, green chillies pieces and ginger pieces.
2. When the mustard seeds start to splutter add the onion pieces and mix well.
3. When the onion becomes translucent add 4 cups of water and add salt.
4. When the water starts to boil add the wheat rava and mix well. When it totally mixed add butter milk and mix well.
5. When it is fully cooked, this will be soft. Remove the chilli pieces and serve for kids.
